I’ll admit it – I dislike bananas, yep a vegan who doesn’t really like bananas – I realise that is strange. The thing is I only like them when they are a certain ripeness, they can’t taste too banana-ry……
So as soon as they “cross over to the dark side” they end up in banana bread. And I had some this week that did just that. I love banana bread but like to make it a little different by adding in some pecans, shredded coconut or choc chips (depends on my mood…..and what’s in the pantry).
So I hope you enjoy my scratch up simple Coconut Banana Bread as much as my family did.
- 2 cups plain flour
- 3 medium-large ripe bananas
- 1 cup coconut sugar (or sugar of choice)
- 3 tsp baking powder
- 1.5 tsp cinnamon
- 1/4 tsp salt
- 1 x chia egg (1 TBS chia + 3 TBS water, allow to sit and absorb)
- 1/2 cup of soy or almond milk
- 3 TBS coconut oil
- 1/2 shredded coconut
- 1/2 crushed pecans – optional
Sift flour, baking powder, cinnamon and salt into a bowl.
In a smaller bowl mash bananas and then add milk, coconut oil and the “chia egg” mix.
Add sugar and coconut to the dry ingredients and stir to combine then add the wet ingredients to the dry mix and stir to combine.
Scrape into preferred cooking tin. This time I used 4 small loaf tins and cooked them in the air fryer for 10mins and then another 8mins covering the top with aluminium foil so the tops didn’t burn.
Test with a skewer to ensure the centre is cooked before removing from the oven.
